Cold hands and feet….warm heart!  Er, BELLY!

BRRRR.  It is damn cold out there!  All you want to do right now is crawl into bed under a giant pile of covers and stay there for the whole day.   Well, while you are in hibernation you are going to have to eat something.  Here is my recipe for a delicious, hearty, copious lentil shepherd’s pie that will keep your belly warm and thaw out your icy appendages.  This recipe will get you 6 large portions of deliciousness!


–>  This meal is packed with tons of vitamins and minerals like iron, folate, potassium, magnesium and fiber.  It is a great way to refuel and recover from your latest workout.  Add a side of greens to boost the protein (around 2g per cup-size portion!) and other nutrient content.


This meal takes about 1.5 hours to make.  If you are running short on time, you can substitute canned or pre-cooked lentils for the dried.  Just sauté the vegetables per the recipe, add the lentils, then skip to the mashed potatoes.  If you use pre-cooked lentils, be sure to start boiling the potato water when you start making the lentils, to minimize overall prep time.  Play with the spices and adapt the recipe to your taste!
